Highlights
Hopes? Third visit to Mama Uma Jomm. Standards maintained?
Reality? Yes. Yes! Yes. Yessss! And yes, you'll have what I had.
First Impressions? Contemporary white Airbnb chic.
USP? Menu designed by Juan the Spanish owner, led by his Korean experiences, recipes perfected with Korean chefs. A similar offer can be found in Mercado Barcelo.
The offer in three words? Nudging Michelin boundaries.
Service? Excellent. Dishes explained as necessary. Checked with us in advance about dessert, which needs a little extra prep time, so kept things moving very nicely.
On tap? Estrella Galicia. It's a little stronger than we'd ideally choose with this cuisine. A Korean Cass  - unsuprisingly - goes very nicely, mind.
Friend friendly? Vegetarian should be doable. Vegan might need some checking.
Rating for dating? Judging by the  - Full Disclosure Alert - slurpy PDAs going on nearby, that's a biiiig yes. Very big. Missus.
Tip? Absolutely earnt.
Change one thing? Victoria or similar rather than Estrella G.
Revisitability? Server explained menu variations are on the way. We shall return. Again.

Eat me!
Buchu-Jeon Slightly caramalised green veg pancake with very tasty crispy burnt bits. Add soy. A splendid sweet and salty combination. A trifle tricky to divide up with chopsticks, but an utterly splendid starter. Bo-Ssam A little gem. Which takes leaves of little gem, conveniently, and fills them with sauce, slices of very fine spiced panceta and lets you get on with noshing on it. A serving of four is fine for two peple. You're leaving elegance at the door eating this, though. It's going to get messy. A bowl of warm water and lemon would be welcome for clean up. Kimchi We ordered seconds. All flavours present and correct.

Mean Ribs The undisputed highlight of the Mama Uma Jomm savoury meat dishes. Accompanied on this occasion by a (very finely shredded) dressed cabbage salad, that acted as an excellent palate cleanser, so each fresh rib, with its spicy, sweet acid glaze, had a new hit of intense flavour. There are even nuts for texture. And, if this is your sort of thing, you'd be nuts not to try this. I much preferred this combination of textures and flavours to the previous creamy potato. The attention to freshness, meat cooking and flavour intensity puts this squarely in M* quality territory. Only the portion size - it's quite big - and perhaps the garnish - I'd stick with that salad, without hesitiation - could be open to debate.

Hotteok there's only the one dessert on offer. And there only needs to be. You'll likely have tried nothing quite like it. Almost savoury in some senses, this pancake, cinnamon and nut combination comes with a generous wodge of very creamy vanilla ice cream. Again, we're approaching very high levels, although something more is needed to get to the peak. Perhaps a contrasting sweet acidic element. Something with berries? And arguably a more distinct ice-cream flavour. We're not sure. But still. It's terrific.

Look, the truth is, you've guessed. Mama Uma Jomm is recommended. Simple!
